Cabbage rolls for dinner

I have been craving Cabbage rolls for a week now. But I finally got to have some for dinner tonight.

I was watching Mandy's Kitchen in CL last year. And that is where I first discovered it. I searched for a detailed recipe and tried to substitute some ingredients that were not available in our kitchen at that time. We were still on lockdown so getting ingredients back then was difficult. For my first try, it came out good. My problem was not I did not cook enough. During that time, my sauce was a bit runny.

This time I made enough for everybody and a thicker sauce. I am glad I can cook these dishes, and my daughter likes them. I already know how to cook even during my high school days, but it is only now that I am learning new recipes.

I hope I can share more in the future.

Errand day

Yesterday, I went to the Statistics Office to get some documents. I was supposed to start early, but I woke up late. I was also concerned about who would look after my daughter when I go out. Luckily, my sister was able to watch over my daughter while I was away.

I walked from our house to the Statistics Office. Google Maps said it would take me 30 minutes to an hour, though it only took me 20 minutes. I enjoy walking, even during my college days, so this was a treat for me.

My expectation upon arriving at my destination was a long queue since I arrived late. Learning from experience, I already psyched myself that the whole process will take time. I brought water, food, and a book for me to read, and importantly kept a cool head. It paid off as I eventually got my documents stress-free despite the two-hour and a half processing.

I then rode two train lines and went to the bank to consolidate my bank accounts. It was also a long wait as there was also a queue in the Customer Service Desk. When it was already my turn, I had to sign many papers.

Eventually, I got it all done and ended my errands with Cello's donuts and brewed coffee. My sister and I shared the donuts. It was my way of thanking her for watching over my daughter while I was out. We reminisced about our "Katipunan days" because of the donuts. But most of all, we had a realization - this is another entry for the future.

New Year's Eve

 Last year, we introduced the kids to sparklers. This year, I had a little difficulty looking for the sparklers in the market. I then resolved to look for it online. Luckily I found a supplier, and I immediately bought two sets for the kids. They had fun with the sparklers, and we even took long exposure pictures, which is a first for my sister and me.


I took the New Year's Eve feast as an opportunity to prepare something new again. It was my first time preparing apple pie. And I am proud to say that it was a success. Also, I was thinking of preparing noodles for the new year, instead of the usual spaghetti. I was thinking something like the "Noodle Feast" of Lam Tin. As I was buying ingredients in the supermarket, I found a pack of ready to mix Asian pasta sauce. And this made it easier for me to materialize my plan, in addition to this, I bought dried seaweed and more vegetables.

Our ham was homemade too. (-_~) recipe from my dad, but it was my first time to do it also. So many firsts during the New Year's Eve preparation for me.

Christmas is for the Kids, and Food are for Adults

At the start of December, my sister and I unboxed the Christmas tree and other decors. We never had themes for our Christmas decorations, simply put them all together and, voila! It's done.

For this year, my sister and I decided to print our kid's favorite cartoon characters, let them color them, and hang them on them in the tree as decors. I then bought some Christmas balls and garlands to add to the tree. We didn't have a star, so I made one out of paper origami. It wasn't the best Christmas star, but the kids liked it.

As for my sister and me, we decided to print pictures of our favorite Jpop groups and hang them on a line. After I displayed the prints, my sister commented that it looked like the white paper hanging in front of a shrine. She jokingly clapped her hands together and said a "prayer" under the prints.

Next were the gifts for the kids. We already bought some of the books, toys, shoes, and clothes more than a month before December because most were already on sale. Our dilemma was hiding them in plain sight. It was tricky, but we made it.

The last-minute preparation was a Jollibee plush toy that we bought a week before Christmas. We know the three kids love Jollibee, and I saw an ad where the plush toy was featured. I immediately searched if it was being sold and how to get it. Luckily it was available at the nearest Jollibee store near our house, and we bought three Jollibee plush toys, one for each of them.

I knew the kids would just rip through the packaging, so I decided to wrap all the gifts in brown paper that I have accumulated this year from grocery shopping. I then decorated it with cut-outs from magazines, and I even put their initials on their gifts, so they know whose is whose.

Christmas is definitely for the kids.

For the adults? The feast.

For this year, instead of having our usual spaghetti, we decided to have baked macaroni. The reason behind this was because we bought 5kilos of macaroni noodles for a low price. We are glad that the baked macaroni was a success considering this was the first time we made it. Though it was generally easy to make, I get nervous when I do something for the first time.

It was also my first time to successfully bake lime muffins. This was not my first attempt baking lime muffins. Previous attempts were a fail, and this is the first time that I perfected it. My daughter even liked it.

Christmas is truly for the kids. For adults, it is a chance to prepare something new and noteworthy for our family. Especially since we are amid a pandemic.

No judging

Nowadays, parents are being shamed for what they feed their children, but as a parent myself, I know there is more to it than what we always see.

Every parents wants their child to eat healthy. Unfortunately, there are more “unhealthy” food in the market that are enticing to kids. Some would say, “you should have started when she was still 6 or 7 months old.” What if they did, but you see, as the kids grow up, they develop the sense of self. They try to assert their independence, specially in the food they want to eat. They get influenced by their peers who eat junk food and the media isn’t exactly helping - have you seen the adverts on the television?

Eating healthy in this current situation is easily said than done.

Location and resources are some of the factors in the kind of food a parent can offer their child. In the province, it is sometimes easier to train the kinds to eat healthy because the vegetables and fruits are generally more accessible. As compared to the metro, you have to buy everything, so if you have a limited budget, you have no choice but to buy cheap food even though you know it is unhealthy.

Convenience and social influence are other factors. In this fast-paced world, convenience in everything. Easy-to-cook meals are a thing now. Everyone knows it is full of harmful chemicals for the body, but it is very convenient specially if you are trying to balance work and food preparations for the family. It doesn’t help that commercials nowadays are aimed at kids (drinks, candies, chocolates, food chains, etc), so when they ask their parents for it, the parents have a difficult time saying no. This becomes a dilemma for the parents, “saying no and disciplining them” vs “let them have their way just so the kids won’t cry”. Either way, both decisions are stressful.

Of course there are more factors, but at the end of the day, parents are shamed for their decisions. We don’t know what every parent is going through, and it does not help if we judge them with their decisions. I bet most parents are racking their brains just thinking what to feed their kids.

If you ask me, what’s important is they eat, there is variation in what they eat and find a way to compromise - “you can eat the sweet, as long as you also eat what I want you to eat” sort of way.

This is was my daughter’s breakfast a few days ago. I posted it on my Twitter and Instagram with the caption “please don’t judge me,”


It’s a somewhat compromise. She likes cereals, I want her to eat the eggs and we both want the tocino.

My daughter prefers bread and pasta over rice, and that is fine with me, but apparently it’s not fine for some people. I was told I am not feeding my daughter well, that she is growing up spoiled since she doesn’t eat rice. That’s it, just because she doesn’t eat much rice.

At some point I questioned myself, heck, I always question myself on how I am raising my daughter.

Despite my self-doubt, my daughter always made me proud. She is independent, when she is hungry, she knows what she wants and if she knows where it is, she just gets it. She is not picky with her food, unless of course she is not comfortable with the taste or texture, but in general, she eats anything and everything.

My daughter is healthy, normal weight, normal height, rarely gets sick.

I as a parent, am happy.

That is why, everyday, I ask,

Is there really a need for parent-shaming?

Watermelon

Summer = watermelon 🍉🍉🍉

In almost all the anime I watched, there is a "summer" episode where they go to the beach and they always eat watermelon. I've always wanted to try that, unfortunately, we can't right now due to this pandemic. Maybe next time?

Sunday

I make it a point to cook pancakes or french toast for sunday breakfast. It gives me a warm, calm, rustic and homely feeling on a laidback sunday.

For this sunday, I had an addition of milkshake as my morning drink. It was a mix of milk and leftover chocolate spread, plus an addition of vanilla ice cream.

Foodie

Just because food is life.

Homemade pizza by yours truly. My father used to work in a famous pizza place in Australia. He sort of passed down the knowledge to me and my siblings. Maybe a future business?

Next, pasta corsicana. Well, I learned this from my father. Pizza toppings (minus the pineapple) or leftover food, pour in the tomato sauce, and finally mix with your choice of pasta noodles. Viola! Pasta Corsicana.

Lastly, strawberries we bought from a family friend. Bought it out of craving. It was like a birthday gift to myself.

I am sort of the official cook in our household. So you might expect foodie posts once in a while.

ate jen's surprise birthday celebration

we had a surprise birthday celebration for ate jen last june 7!

her birthday is june 15, unfortunately, she is at the province during her birthday,

so we decided to give her a surprise party a week before her birthday!

surprisingly, her guests last year, were the same people who attended this year with a few additions. (^_^)

BIRTHDAY!

hi everyone! last tuesday, i had an unexpected celebration... ooopps, make that two. (^_^)

i was surprised during lunch time by my colleagues from QUEST and ET recruitment team of macquarie. they treated me to a sumptuous lunch at mom and tina's. in addition to that, they gave a dulce de leche cake (^_^)

at home, i knew that the music min had a practice at home, but in the later part of the night we were already celebrating my birthday! we had lots of food and had a few entertainment of our own (^_^)

hopefully i could find a way to retrieve some of the photos from my dad's camera. (^_^)

company outing

last weekend, we had our company summer outing at the subic bay yatch club. the ride from the office to the venue seemed longer than the way back. (^_^) anyways, the room was superb. made me feel like keigo atobe. the beds were huge, the bathroom was huge! we had a walk in closet, sink area, powder area, toilet area, shower area and... hold it... a jacuzzi! yes! you heard it right! we had a jacuzzi! i didn't use it till our second night though.

anyways, upon arrival, we checked in our rooms and we had a rest. we then had karaoke at the bar, had dinner and went for a night swim at the pool. (^_^) the next day, we had breakfast and went to the tree top adventure ride. after that, we set sail on a yatch for about an hour. lastly, we had our dinner in a semi-formal attire. (^_^) the next day was free time. what did i do? i had a swim on the pool! (^_^) the ride home seemed faster than i had expected.

hello everyone!

how are you? please forgive me for the lack in posts.

last weekend, we attended the first west b2b reunion! we had this performance ala "high school" musical. yours truly was sharpay. here is a link to somepicture from my phone and some that i grabbed from my friends. (^_^)

drawing. one of my many passions. of course its not everyday that i really have time for it. so sometimes, i doodle. and here is one of the results of my random doodling. (~_^)

life at the office is becoming to boring. so how does my friend rizell and i fight the boredom, we eat! we used to put aside our cravings and as much as possible just eat the free food at the pantry. but recently, we have been going out for lunch just to have that walk and change in environment. first off, the pasta at sbarro. kind of expensive but i think its a little worth it. second, the "atherosclerosis" meal. seriously, this dangerous food for those who are high blood and has history of heart disease. but does that stop us from eating it? no! (>_<) lastly, a choco pudding given by my superior. (^_^) its chocolate, its pudding, its cold, its delicious. thats all that i have to say.

that last part made me hungry. got to go. chiao~

another super update

hi everyone! it's been really hard for me to update my blog recently due to work and limited internet access. there have been a lot that has been happening lately, and to tell you all the truth, i can't even remember some of them. i do have pictures so... i'll just tell you all about these pictures are. (^_^) we will start with the albums.

1st SFC Big West Conference

we are all proud to say that we are the pioneer members who attended the conference. (^_^) the venue as at my alma mater, Miriam College. There were 3 talks, praise fest, mass and dances. i also bought shirts, but no pictures yet of the shirts. you will all see them in my future pictures. (^_~)

next, the birthday celebration of Rex, our manager, and also the quarter celebration of our company since we reached our quota for this quarter. yosh! it was all a treat from our boss, James. thank you! (^_^) the pictures will tell it all.

next, pictures i have "edited"

there has been an on going campaign to lessen the garbage and plastic usage around the world. it's now advised to bring your own bag for groceries and stuff, or they use paper bags. one particular establishment took it a notch higher. the design of their paper bag is a copy of a painting by a filipino painter. really awesome! i couldn't throw the paper bag because it was eye-candy for me. i kept it for myself. (^_~)

second picture? it involves cold treats! korean ice cream, because my friend at office wanted to try it for the first time. the second treat? earl grey ice cream! no kidding (^_^) best only when served cold though. if it melts, it's not that enjoyable anymore. then again, that's just me. it was the first time a tested this flavor in an ice cream. i mean, i drink earl grey tea, but ice cream? i just had to try. (^_^)

you have all heard of the sandwich shop Subway right? well... i only at there recently and i realized ho much i as missing! hehehe! the sandwich as just great. i would definitely buy there at least once a week. (^_^) i am so behind with a lot of stuff so don't be surprised hen you see "first time" in my entries. (^_^)

rarely do i go to Starbucks because i have this notion that drinks and food are overpriced there. but i do admit that there is that rare moment that you think you just really deserve it after busy days and stressful tasks. (^_^) choco-glazed donut and strawberry and cream frappe. (^_^)

our team leader treated us to frozen margarita and snacks is celebration of those e have hired for the client company, kampai! (^_^) yes, another first time for me. (^_^)

and lastly, friday was a holiday here. but i went to work for half day. i jut had to take a picture of myself. i don't know why, i just had a feeling i had to. (^_~)

there are so many things i missed telling in this entry, but as i said earlier, i can't remember the other events anymore. please forgive me. m (_ _) m
